Introduction to the Biology of Nutrition and Impact on Human Health

This course will introduce students to the concepts of nutrition. It will cover the biology of the different food groups that make a balanced diet (carbohydrates, fats, proteins) and how our bodies obtain energy and important molecules, such a vitamins, from our food. The course will also cover the relevant anatomy involved in digestion and excretion. Other topics such as the effects of food production on the environment, fad diets, and disease states will also be studied, along with the latest hot topics in the news.
